Birch Sap. Björksav in Swedish. You cut a small branch of a birch tree during spring (April-May) and hang a bottle from it. The bottle will fill in a day with the juice of the birch. Draw the yield through a coffee filter to clear the drink completely. And what you get is a slightly sweet, slightly aromatic.... well.... water. Cool well before drinking. Very refreshing! You can keep it in the fridge for 2-5 days.
Put some mud on the cut branch afterwards so the tree doesn't continue bleeding. And only do this with the same tree once every 3-4 years.
